Easy Vegan Pancakes

There is no better way to start a morning than with fluffy pancakes drizzled with sticky maple syrup!
This easy vegan pancake recipe is not only egg-free, but it’s also light and guilt-free!

I’m not a morning person and yet it is my favourite time of the day. I love the stillness. The touch of the cool air on my skin, the way the light dances through the blinds and savouring cups of freshly brewed tea. There is something romantic about being in your lover’s arms, without having a word to say, entwinedย between layers of thick blankets.

This particular morning, however, was different. While enjoying mouthfuls of fluffy pancake drowned in maple syrup, my partner was ranting about Instagram Influencers promoting brands like Louis Vuitton. Normally the energy would agitate me, but I found his words so inspiring that I felt inclined to share them with you.

There is one thing to be an ambassador, but what about an ambassador of an idea or a concept? Many of these people have the platform where they could promote equality, sustainability, or respect towards this or that; something that is good for the planet. But, when you do it for a luxury brand that extorts people and only targets people with money, what’s the point? It’s not real beauty.

Luxury is not a good motivation. You see it everywhere, you can’t afford it and it only encourages people to focus on money. It’s the wrong idea to be spreading to the world.

If you influence people in a different way, to work at doing something to help people or the environment, they aren’t going to spend their time earning money to buy something useless. It’s “flashy” but there is no true difference as to what the object is achieving, whether it’s a car or a handbag.

If people spent the same amount of energy towards a good cause, the world would be a better place.

We wouldn’t buy things for the sake of it. We wouldn’t place a greater value on objects than we do over people, and perhaps we could invest that in learning something new or creating something beautiful.

Ingredients
  1. 2 tablespoons apple cider vinegar
  2. 2 teaspoons baking soda
  3. 2 1/3 cups of plain flour, sifted
  4. 4 teaspoons baking powder
  5. 1/2 cup brown sugar
  6. 1 teaspoon vanilla essence (optional)
  7. 2 1/2 cups of soy milk
  8. 3 Tablespoons coconut Oil
Equipment
  1. Small mixing bowl
  2. Large mixing bowl
  3. Measuring cups & spoons
  4. Egg beater or whisk
  5. Ladle
  6. Spatula
Instructions
  1. In a small mixing bowl, combine the apple cider vinegar, and baking soda. Stir until bubbling and set aside.
  2. In a large mixing bowl, add the plain flour, baking powder and sugar. Mix until well combined.
  3. Pour the apple cider vinegar mixture, vanilla essence and soy milk into the large mixing bowl. Using the egg beater or whisk, mix until the pancake batter is well combined.
  4. Place a small non-stick frying pan over medium heat.* Add a small portion of the coconut oil to lubricate the pan. In batches, cook one ladle of the pancake mixture for 3โ€“4 minutes each side or until golden brown.
  5. Drizzle with maple syrup to serve, Bon Appรฉtit! ๐Ÿ™‚
Notes
  1. * A smaller frying pan will create fluffier pancakes as opposed to a larger pan.

    So right you are – luxury is not a positive thing because it encourages unnecessary spending. It is better to channelise energy towards more positive things in life.

    First, your food photography is on point! Such beautiful images… But more importantly, also beautiful words.

    We need to be careful of the “influencers” we are putting up on a pedestal and the products/brands they promote. I agree, causes and ideals would be much more powerful.

    Like you, I am not a morning person either. I used to get up late, but whenever I get the chance to wake up early before the sun shines, I really embrace the moment. I marvel at the beauty and peace that it usually brings.

    I really don’t consider myself as an influencer but the topic about them is really hot right now… I’ve heard some who are proclaiming themselves as influencers because of the number of followers they have but the engagement is quite low.

    I agree with what you say. In my opinion, if you are an influencer it’s better to give your followers something useful to absorb.

    Anyway, back to the food.. Haha my gosh… I am craving for pancakes now!! ๐Ÿ™ I imagine it with creamy butter and maple syrup indeed

      Exactly! I wish I had expressed it much the same!

      So many times I see an Instagram post with a handful of likes and yet they have thousands of followers. That’s not true engagement and it’s not how it should be measured. ๐Ÿ™‚

    I learned two things from this post. I could include vanilla extract in our pancake batter. Second, now I know that to have fluffier pancakes, they should be cooked in a smaller-sized pan. I didn’t even notice it before!

    Pancakes are my go-to breakfast when I just don’t have enough time to prepare some for the boys. I just whip up the batter and pour some into the pan. Now, to make our pancake yummier, yes, I will include vanilla extract.

    As you said luxury is not a good motivation and it is not always about money. Personally, I consider that I have a luxury life when I have a book to read in a relaxing calm and quiet place. ๐Ÿ™‚

    I am also a blogger but I’m not sure about being an influencer that most of the business owners define. (Actually PR agents who work for businesses.) For me, I am an influencer in certain topics. I share my ideas in the positive way. For example, I encourage mums with my DIY projects, cooking for family and how to work from home while taking care of the kids. But, most of my ideas are to save money and spend more time with kids, which may not be a good topic for such branded or expensive businesses/products ๐Ÿ™‚

    Anyway, these pancakes look delicious. My kid was asking me to cook pancakes for him after having some activity in his preschool related to cooking. So, I will try this recipe with him soon!

    I’ve never heard of vegan pancakes until now! Luxury is something that we all have at different levels. Some may see luxury as having the chance to sleep for 8 hours or more. Then for some, it would be feasting on these sumptuous pancakes! I’m actually happy that I’m learning a lot of recipes from you that I could try in the future! I’m very much thrilled to try this at home!
